Update from someone farming and logging with horses: since this was published, the prices he quotes are no longer realistic. Not at all accurate. Everything else is bang on, just not dollar values for infrastructure items, costs have gone up a lot in 10 years or more.

In my experience, the biggest thing with contamination is that: Bacteria/yeast - too much water in substrate or water needs rinsed and exchanged for fresh water. Mold - too little water/humidity, especially on the very surface of substrate/mushroom culture. Growing in draining containers like you would a plant works really well for just the right amount of bacteria to keep the mold at bay, and the single-celled bacteria tends to wash away every time you re-water it. Unfortunately fungus gnats are a serious threat to any containers that have big enough holes to properly drain. Balancing these two factors has been my biggest problem, personally.

I think you may be wrong about the potential productivity of a given area of land. If you were to take 1/5th of that coppice would and turn it into charcoal, and another 1/5th cut as ramial (1st year green and leaf wood) to shred for compost to innoculate that charcoal, turning it into biochar, and another 1//5th to use as mulch around each coppice stool for one rotation, you would only get 2/5ths production for that given rotation, but you would make gains in the woodland's ability to hold and store moisture and nutrients that might exceed the land's current capacity as stated near 21 and 22 minutes in this vid. If that was done over 100 or 200 years the land would certainly be more productive. Just a thought.
